What is Falernum?
Falernum is a sweet syrup used in tropical and Caribbean drinks. It contains flavors of almond, ginger and/or cloves and lime.
It is used in cocktails in a manner similar to orgeat syrup. The syrup form is usually non-alcoholic.
In a mixed drinks of rum punch is made with four parts water, three parts rum, two parts of falernum, and one part time juice – otherwise known as “one of sour, two of sweet, three of strong, four of weak.”
Falernum was a discovery of Bajan Henry Parkinson who combined ground almonds, brown sugar, clove powder, and ginger root, with crushed limes.
Parkinson’s descendent, Arthur Stansfield, registered it in 1934.
Corn and oil is a mixture of rum and falernum.
